From the time she was a toddler in Louisiana, chef Michelle Matlock was schooled in the fine art of gumbo. The new executive chef of Communitas Hospitality’s 10th & Piedmont and G’s Midtown has joyfully ladled out her savory version from Hollywood’s Sunset and Vine to some of the finest restaurants in New Orleans, including the Royal Cafe’ and Acme Oyster House. She achieved her culinary school education through the American Culinary Federation Apprenticeship Program at Delgado Community College, apprenticing under renowned French Master Chef René Bajeux at the famed Windsor Court Hotel’s Grill Room.
With just a year under her belt in Atlanta, Matlock continues to meet local farmers to incorporate the best of their bounty into her menus, like the eclectic international tapas menu she’s created at 10th & Piedmont.
Pumpkin & Duck Paella
Chef Matlock at 10th & Piedmont has developed a special dish for autumn featuring rice cooked with stock flavored with pumpkin, fennel, sage, and thyme. The paella is combined with pumpkin, peas, mushrooms, and cranberries, then topped with a succulent medium seared duck breast.
