Chef Zeb Stevenson’s Poached Wild Pears at Parish


Zeb StevensonChef Zeb Stevenson, formerly of Livingston at The Georgian Terrace, was enlisted earlier this year by Concentrics to revamp the menu at newly named The Brasserie at Parish. You may recognize Stevenson as one of several Atlanta chefs that has won Chopped!

Located within a stone’s throw of the beltline, The Brasserie at Parish is poised to flourish under Stevenson’s leadership. This is one of the amazing dishes we sampled at a recent media dinner introducing his new menu.

In the end I’m shooting for balance on the plate and I have a tendency to work in extremes. The Poached Wild Pears with arugula, speck, honey and bottarga are a good example. All of the flavors and textures on the plate are very defined and meant to play against each other. There is a risk in cooking like that but it’s the personality that I’m trying to bring to Parish. ~ Zeb Stevenson
