Perhaps the first tuna dish that I actually loved was Scott Serpas’ tuna tartar at his restaurant, Serpas, located in the historic Old Fourth Ward neighborhood.
Chef Serpas’ ability to find the perfect balance between savory and sweet is evident in his remarkable tuna tartar. Served in a large martini glass, the diced sushi grade tuna is combined with tiny diced green apple and Vidalia onion, then tossed with a sweet chili sesame vinaigrette. It’s served with gigantic housemade thick-cut potato chips.
